Aromes de Pavie - Saint Emilion
Was mit Pavie passierte und noch passiert ist wohl einmalig, auch die Preissteigerungen. 1998 kaufte der weinfanatische Gerard Perse Chateau Pavie für 31 Millionen Dollar. Perse scheute keine Mühen und Kosten, um in den Jahren danach aus Pavie ein Château der Sonderklasse zu machen. In den vergangenen Jahren sind die Qualitäten sprunghaft gestiegen, die internationalen Bewertungen permanent auf hohem Niveau. Inzwischen hat Pavie 42 Hektar unter Reben, bepflanzt sind sie mit 70% Merlot, 20% Cabernet Franc und 10% Cabernet Sauvignon. Die Lage an den Hängen südlich von St. Emilion ist traumhaft. Die alten Reifekeller sind ehemalige Steinbrüche, wie man sie in St. Emilion oft findet. Hier wurden in früheren Zeiten die Kalksteinblöcke gewonnen, die zum Hausbau verwendet wurden. In diesen Kellern, die bis zu 17 Meter unter der Erde liegen, wachsen teilweise die Wurzeln aus der Decke heraus. Die jüngste Renovierung dauerte von 2001 bis 2013. In gerade mal 24 Monaten schuf Gerard Perse den wohl modernsten Keller in ganz Bordeaux. Nicht nur deshalb hat Pavie das Potential, zur absoluten Spitze aufzusteigen.

91-93 THE WINEADVOCATE: "Composed of 50% Merlot and 50% Cabernet Franc, the 2020 Arômes de Pavie has an alcohol of 14.78% and a pH of 3.57. It is aging in French oak barriques, 70% new. Deep purple-black in color, it needs a little swirling to unleash its exuberant scents of stewed black plums, black cherry compote and boysenberries, plus hints of tar, sautéed herbs and chargrill. The full-bodied palate packs in the black fruit layers, framed by soft tannins and tons of freshness, finishing long and earthy."

92-94 FALSTAFF: "Tiefdunkles Rubingranat, opaker Kern, violette Reflexe, zarte Ockerrandaufhellung. Frische Herzkirschen, feine Brombeerfruchtnuancen, ein Hauch von Limettenzesten, mineralischer Touch. Straff, engmaschig, zart nach Heidelbeeren und Kokos, integrierte Holzwürze, salziger Nachhall, feiner Nougat im Rückgeschmack, dunkle Mineralität im Finish."

16,5 JANCIS ROBINSON: "50% Merlot, 50% Cabernet Franc. From designated parcels (11 ha) on the plateau. Cask sample. Ripe and pure-fruited but the freshness really comes through with this (first time) 50/50 blend. Chalky, mineral note behind. Fine-grained tannins. Drives on the finish with the fruit and freshness. More than adequate understudy while awaiting the grand vin."

90 DECANTER: "Powerful and upfront, with a thick layer of liquorice and clove, blueberry and blackberry fruit. A little more of a monolith than the main estate wine of Pavie - something that you find often this year, where the tannins seem to go to the second wines. 70% new oak, 3.57pH. A yield of 35hl/ha."

95-96 JAMES SUCKLING: "Second wine of Pavie with wonderful blackberry, black olive and dark chocolate. Full and chewy with a powerful finish. Lots of structure and intensity."

91-93 ANTONIO GALLONI: "The 2020 Arômes de Pavie represents a major step up in quality vis-à-vis previous vintages. It is a deep, statuesque wine endowed with tremendous power, richness and resonance. Plum, mocha, licorice, espresso and spice all flesh out in the glass. I can´t wait to taste this in bottle. This is the first year in which the blend is equal parts Merlot and Cabernet Franc, both increasingly from plots dedicated to the Arômes, a departure from the past, when this wine was a selection of younger-vine fruit and lots that did not make it into the Grand Vin."

90-92 NEAL MARTIN: "The 2020 Arômes de Pavie, which comes from specific parcels, contains a much higher percentage of Cabernet Franc, half the blend instead of the 18% in the 2018. It was vatted for 31 days and matured in 70% new oak. Deep in color, it has an intense bouquet of blackberry, pencil lead and a faint touch of tobacco, the new oak conspicuous but in sync with the fruit. The palate is medium-bodied with fine-grained tannins, plenty of black plummy fruit laced with bilberry, and a saline undercurrent. A stocky Deuxième Vin, but it manages to maintain decent balance and freshness. I hope we see the Cabernet Franc at this level in the blend going forward."

93-95 THE WINE CELLAR INSIDER: "Deeply colored, the wine offers red and black plums, flowers, boysenberry, espresso and dark chocolate on the nose. On the palate the wine is full-bodied, lush and concentrated, velvet textures and loads of sweet, fleshy, flashy, dark red fruits, spice, espresso and cocoa in the finish. Aromes de Pavie is no longer the second wine of Pavie. Because all its fruit comes from a specific 11 hectare parcel, it should be looked at as its own brand. The wine blends 50% Merlot and 50% Cabernet Franc."

92-94 JEB DUNNUCK: "Always in the running for the best second wine in Bordeaux, the 2020 Aromes De Pavie is brilliant and surpasses any number of estates’ Grand Vins. The blend of the 2020 is equal parts Merlot and Cabernet Franc, and it has solid tech numbers, with an alcohol of 14.7% and a pH of 3.57. Dense purple-hued with a great nose of jammy black cherries, cassis, flowers, and chalky minerality, it’s medium to full-bodied and has a supple, up-front texture, ripe tannins, and brilliant balance. It tastes just like a second wine should, like a mini-Grand Vin that will drink beautifully while you give the top wine bottle age."

Eine beeindruckende Leistung, die das Team von Gerard Perse hier ablieferte. Insbesondere der Wandel weg vom dicken Ding hin zu mehr Präzision und Eleganz beeindruckte uns sehr. So zeigte 2020 Pavie nach wie vor die Power des Hauses, aber mit Energie-geladener Tannin und Säurestruktur, die eine schöne Balance in den Wein bringt. Wenn das die Zukunft für dieses Traum-Anwesen ist, dann sind wir mehr als begeistert. Die Bewertungen rechtfertigen die Vorgehensweise. Chapeau!

97-99 THE WINEADCOCATE: "Composed of 50% Merlot, 34% Cabernet Franc and 16% Cabernet Sauvignon, the 2020 Pavie weighs in with an alcohol of 14.82% and a pH of 3.61. It is aging in French oak barriques, 75% new. Opaque purple-black colored, notes of plum pudding, blueberry pie and dark chocolate-covered cherries charge out of the gate, followed closely by hints of eucalyptus, star anise, unsmoked cigars and fertile loam with a hint of cedar chest. The full-bodied palate is built like a brick house, offering very firm yet wonderfully ripe, velvety tannins and seamless freshness to support the densely laden, muscular black and blue fruits, finishing very long and with loads of mineral-laced layers. As hedonic as it is cerebral this year, it is a beautiful paradox."

95-97 FALSTAFF: "Im Duft Wachs, Schwarzkirsche, Waldheidelbeere. Gute Frische. Im Mund großzügig und weit gefasst, spielt mit Saftigkeit und Opulenz (und etwas Süße), was aber von einer stattlichen, aber nicht übers Ziel hinausschießenden Dosis reifen Gerbstoffs mittlerer Körnung kontrastiert wird. Kreidige Mineralik. Ein saftiger, feinnerviger, fruchtiger (leicht liköriger) Abklang."

94-96 WINE ENTHUSIAST: "94–96. Barrel Sample. Big, bold and rich with solid black fruits and dense tannins that are definitely not shy. This solid wine is packed with structure. The fruit and freshness of the year are almost overwhelmed by the wine´s richness. The wine is redeemed by the perfumed, balanced finish."

18 JANCIS ROBINSON: "Power and elegance combined. Deep purple-black colour. Intensity and complexity on the nose with dark fruit, cassis, mint and floral notes. Beautifully poised on the palate with smooth attack and persistent fruit and freshness. Powerful tannic frame but tannins really fine and no extraction. Long, persistent finish. Absolute precision. More than highlights the change in style. One of the best yet. (JL) 14.8% Drink 2030 – 2050"

97 DECANTER: "The Cabernets dominate the blend on the aromatics, and you can really see they are moving the needle on the architecture and sculpting of this wine. A ton of concentration on the nose and upfront, but it is well balanced by damson and blackberry, and has a sense of energy, uplift and clear minerality. This shows the limestone terroir in a way that, with the best will in the world, the more concentrated style of Pavie just didn´t do. There is density and glamour, with layers of black chocolate, graphite and liquorice. It is pretty disarming overall, and will age extremely well. 3.61pH. A yield of 31hl/ha, average age of vine 49 years. 75% new oak."

99-100 JAMES SUCKLING: "The aromas are already exceptional, showing crushed-stone, limestone and salt character to the dark fruit and bark. It’s full-bodied, yet agile. Floats on the palate, then kicks in with loads of ultra fine tannins. The intensity and verve of this wine promises true greatness."

97-99 ANTONIO GALLONI: "The 2020 Pavie is very clearly one of the wines of the year. Rich, inky and wonderfully vibrant, it pulses with energy from start to finish. All the elements are well balanced. Soaring Cabernet Franc aromatics lead into a core of finely knit yet deep fruit in a wine that feels endless. Harvest for the reds started on September 17, paused briefly during some rain on the 25th and 26th, and then wrapped up by the end of the month. The blend is 50% Merlot, 34% Cabernet Franc and 15% Cabernet Sauvignon, so more Cabernets than in the past, the result of a large replanting program that began in the early 2000s. A real head-turner. Magnificent!

95-97 NEAL MARTIN: "The 2020 Pavie was picked September 21–30 at 31hl/ha and matured in 75% new oak, the rest one year old. It continues to see greater emphasis on Cabernets – 34% Franc and 16% Sauvignon, the Merlot reduced to half the blend. This gradual rejigging of the blend is borne out on the nose, which features hints of damp loamy soil and bell pepper infusing vivid blackberry and wild strawberry fruit, becoming more and more citrusy with aeration. The palate is medium-bodied with sautéed tannins that gently grip. Powerful, but the 14.82° alcohol is neatly disguised on the finish (at least in tasting measure) with fine delineation. Cohesive and focused. I would like to see a little more personality develop during élevage, but this remains an impressive Saint-Émilion and a Pavie with a long future ahead."

98-100 THE WINE CELLAR INSIDER: "Aphotic ink with purple accents in color, the intense sensation of crushed rocks and stones, flowers, licorice, truffle, wet forest, smoke, plums, black and blue fruits with oceanic smells captivate your interest. Full-bodied, concentrated, lush and palate-staining, with all its depth of flavor, the wine remains light on its feet. The fruit coats your palate with layers of opulent, sensuous, salty fruits that hold on to you for at least 60 seconds. Leave this in the cellar for 12-15 years and enjoy the thrills for the next 3 decades. The wine blends 50% Merlot, 34% Cabernet Franc and 16% Cabernet Sauvignon, 14.82% ABV pH 3.61. Harvesting took place September 21 - September 30. Yields were low at 31 hectoliters per hectare."

96-98 JEB DUNNUCK: "A wine that’s going to flirt with perfection, the 2020 Château Pavie is another magical wine from the genius of Gerard Perse and is 50% Merlot, 34% Cabernet Franc, and 16% Cabernet Sauvignon, brought up in 75% new French oak. The style here has unquestionably shifted from the blockbuster style of the 2000, 2005, 2009, and 2010 to a more elegant, refined style today that still brings plenty of fruit yet certainly stays more focused and precise. Is the new style better? I’m not sure, and there are certainly times I miss the opulence and decadence of the old style. Nevertheless, the wines today are magical Saint-Emilion that still show a rare mix of power and elegance. The 2020 is full-bodied and beautifully concentrated on the palate, offering a mouthful of cassis, black cherry, and mulberry fruits as well as a liqueur of rocks-like minerality, leafy herbs, and truffly earth. It doesn’t lack structure and has silky, polished tannins and flawless balance. Give bottles at least 7-8 years in the cellar and enjoy over the following 3+ decades."
